Deliciously crunchy quinoa bites, perfectly balanced with chocolate and peanut butter, ideal for a healthy snack or dessert.
Ingredients

- 1 cup quinoa
- 1 cup dark chocolate, chopped
- 1/2 cup peanut butter
- 1/4 cup hemp seeds (optional)
- 1/2 cup pistachios, toasted and chopped
Instructions
- Rinse quinoa under cold water and let dry completely.
- Toast quinoa in a dry skillet over medium heat for 8-10 minutes.
- Melt dark chocolate in a heatproof bowl over simmering water or in the microwave.
- Mix melted chocolate with peanut butter until well combined.
- Add toasted quinoa and hemp seeds (if using) to the mixture and stir until evenly mixed.
- Place chopped pistachios in the bottom of an ice cube tray or silicone mold, then fill with the chocolate-quinoa mixture and pack tightly.
- Refrigerate for at least 30 minutes until firm.
- Unmold and enjoy!
Notes
Store in the refrigerator for up to 5-6 days or freeze for up to 2 months.
