Description

Deliciously crunchy quinoa bites, perfectly balanced with chocolate and peanut butter, ideal for a healthy snack or dessert.


Ingredients

  • 1 cup quinoa
  • 1 cup dark chocolate, chopped
  • 1/2 cup peanut butter
  • 1/4 cup hemp seeds (optional)
  • 1/2 cup pistachios, toasted and chopped

Instructions

  1. Rinse quinoa under cold water and let dry completely.
  2. Toast quinoa in a dry skillet over medium heat for 8-10 minutes.
  3. Melt dark chocolate in a heatproof bowl over simmering water or in the microwave.
  4. Mix melted chocolate with peanut butter until well combined.
  5. Add toasted quinoa and hemp seeds (if using) to the mixture and stir until evenly mixed.
  6. Place chopped pistachios in the bottom of an ice cube tray or silicone mold, then fill with the chocolate-quinoa mixture and pack tightly.
  7. Refrigerate for at least 30 minutes until firm.
  8. Unmold and enjoy!

Notes

Store in the refrigerator for up to 5-6 days or freeze for up to 2 months.
