- 1 medium zucchini (shredded and well drained)
- 120 g ricotta cheese
- 25 g grated parmesan
- 1 egg
- 1/4 teaspoon garlic powder
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 1/3 cup breadcrumbs
- Olive oil (to spray or brush)
Instructions
- Preheat the oven to 190°C (375°F) and line a baking sheet with parchment paper.
- In a large bowl, combine the shredded zucchini, ricotta, parmesan, egg, garlic powder, salt, pepper, and breadcrumbs. Mix until well combined.
- Using a spoon, form small bites and place them on the baking sheet with space between each.
- Lightly spray or brush the bites with olive oil.
- Bake for 20-25 minutes, flipping halfway through until golden brown.
Notes
Ensure to squeeze excess moisture from the zucchini to avoid sogginess. Feel free to substitute ingredients as needed for dietary preferences.
