Ingredients

  • 120 g ricotta cheese
  • 25 g grated parmesan
  • 1 egg
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/3 cup breadcrumbs
  • Olive oil (to spray or brush)

Instructions

  1. Preheat the oven to 190°C (375°F) and line a baking sheet with parchment paper.
  2. In a large bowl, combine the shredded zucchini, ricotta, parmesan, egg, garlic powder, salt, pepper, and breadcrumbs. Mix until well combined.
  3. Using a spoon, form small bites and place them on the baking sheet with space between each.
  4. Lightly spray or brush the bites with olive oil.
  5. Bake for 20-25 minutes, flipping halfway through until golden brown.
