Description

Caldo de Camarones is a comforting Mexican shrimp soup, perfect for cold days and sharing with loved ones. A delightful blend of seafood and fresh ingredients creates a warm experience with every spoonful.


Ingredients

  • 1 lb of shrimp, peeled and deveined
  • 8 cups of water
  • 1 onion, chopped
  • 2 tomatoes, chopped
  • 2 cloves of garlic, minced
  • 23 jalapeños, sliced (adjust to taste)
  • 1/4 cup of cilantro, chopped
  • Salt, to taste
  • Pepper, to taste
  • Limes, for serving

Instructions

  1. In a large pot, bring 8 cups of water to a boil.
  2. Once boiling, add chopped onion, minced garlic, and chopped tomatoes.
  3. Reduce heat and simmer for about 10 minutes.
  4. Add peeled and deveined shrimp along with jalapeños. Cook until the shrimp turn pink, about 5 to 7 minutes.
  5. Season with salt and pepper to taste.
  6. Just before serving, stir in the chopped cilantro.
  7. Serve the caldo in bowls with lime on the side.

Notes

Store the caldo in an airtight container in the refrigerator for 3-4 days. For longer storage, freeze for up to 2 months.
