Caldo de Camarones is a comforting Mexican shrimp soup, perfect for cold days and sharing with loved ones. A delightful blend of seafood and fresh ingredients creates a warm experience with every spoonful.
Ingredients

- 1 lb of shrimp, peeled and deveined
- 8 cups of water
- 1 onion, chopped
- 2 tomatoes, chopped
- 2 cloves of garlic, minced
- 2–3 jalapeños, sliced (adjust to taste)
- 1/4 cup of cilantro, chopped
- Salt, to taste
- Pepper, to taste
- Limes, for serving
Instructions
- In a large pot, bring 8 cups of water to a boil.
- Once boiling, add chopped onion, minced garlic, and chopped tomatoes.
- Reduce heat and simmer for about 10 minutes.
- Add peeled and deveined shrimp along with jalapeños. Cook until the shrimp turn pink, about 5 to 7 minutes.
- Season with salt and pepper to taste.
- Just before serving, stir in the chopped cilantro.
- Serve the caldo in bowls with lime on the side.
Notes
Store the caldo in an airtight container in the refrigerator for 3-4 days. For longer storage, freeze for up to 2 months.
