Ingredients

  • 500 g yellow onions
  • 3 tablespoons olive oil
  • 50 g brown sugar
  • 2 tablespoons honey
  • 100 ml balsamic vinegar
  • 100 ml apple juice or vegetable broth
  • 1 pinch salt
  • 1 teaspoon black peppercorns

Instructions

  1. Peel and slice the onions into thin strips.
  2. Heat the olive oil in a large pan over low heat and cook the onions slowly for about 15 minutes.
  3. Once they turn a golden hue, add the brown sugar and honey, mixing well.
  4. Add balsamic vinegar, apple juice or vegetable broth, salt, and black peppercorns. Simmer on low for about 30 minutes.
  5. Pour the caramelized onions into a sterilized jar and let them cool completely before sealing.

Notes

These caramelized onions keep well in the fridge for up to two weeks and can also be frozen for later use.
