A super easy and delicious chicken and rice dish that’s perfect for a cozy dinner.
Ingredients

- 1 cup long-grain white rice
- 4 boneless, skinless chicken breasts
- 375 ml chicken broth
- 300 ml cream of mushroom soup
- 300 ml cream of chicken soup
- 1 packet onion soup mix
- Salt and pepper to taste
- Fresh parsley, chopped (optional)
Instructions
- Preheat the oven to 175 °C (350 °F).
- Grease a 23 x 33 cm (9 x 13 inch) baking dish with oil.
- Spread the uncooked rice evenly in the bottom of the dish.
- In a bowl, mix the chicken broth, cream of chicken soup, and cream of mushroom soup until smooth.
- Pour half of the creamy mixture over the rice.
- Place the chicken breasts on top of the rice and season with salt and pepper.
- Pour the remaining creamy mixture over the chicken and sprinkle the onion soup mix on top.
- Cover the dish tightly with aluminum foil and bake for 90 minutes.
- For a crispy top, remove the foil during the last 15 minutes of baking.
- Garnish with fresh parsley before serving.
Notes
Ensure to preheat the oven to avoid undercooked chicken and rice.
