Description

A super easy and delicious chicken and rice dish that’s perfect for a cozy dinner.


Ingredients

Scale
  • 1 cup long-grain white rice
  • 4 boneless, skinless chicken breasts
  • 375 ml chicken broth
  • 300 ml cream of mushroom soup
  • 300 ml cream of chicken soup
  • 1 packet onion soup mix
  • Salt and pepper to taste
  • Fresh parsley, chopped (optional)

Instructions

  1. Preheat the oven to 175 °C (350 °F).
  2. Grease a 23 x 33 cm (9 x 13 inch) baking dish with oil.
  3. Spread the uncooked rice evenly in the bottom of the dish.
  4. In a bowl, mix the chicken broth, cream of chicken soup, and cream of mushroom soup until smooth.
  5. Pour half of the creamy mixture over the rice.
  6. Place the chicken breasts on top of the rice and season with salt and pepper.
  7. Pour the remaining creamy mixture over the chicken and sprinkle the onion soup mix on top.
  8. Cover the dish tightly with aluminum foil and bake for 90 minutes.
  9. For a crispy top, remove the foil during the last 15 minutes of baking.
  10. Garnish with fresh parsley before serving.

Ensure to preheat the oven to avoid undercooked chicken and rice.
