Description

A quick and delicious homemade tomato salsa that’s perfect for snacking or serving with meals.


Ingredients

  • 1 kg ripe tomatoes or 2 cans of peeled tomatoes
  • 2 tablespoons olive oil
  • 1 onion, finely chopped
  • 2 cloves garlic, minced
  • 1 teaspoon sugar (optional)
  • Salt and pepper (to taste)
  • Fresh basil leaves or 1 teaspoon dried basil
  • 1 bay leaf (optional)

Instructions

  1. Prepare the tomatoes: Dunk fresh tomatoes in boiling water for a minute, then transfer to ice water to peel easily. Chop them into cubes.
  2. Sauté the onion and garlic: Heat olive oil in a pot over medium heat, add onion and cook until translucent, then add minced garlic for a minute.
  3. Add the tomatoes: Stir in the chopped or canned tomatoes.
  4. Season it up: Add optional sugar, salt, pepper, basil, and bay leaf. Mix well.
  5. Let it simmer: Lower heat and let the salsa simmer for 30 to 45 minutes, stirring occasionally.
  6. Final touches: Remove bay leaf and blend for smooth salsa or leave chunky depending on preference.
  7. Serve it up: Enjoy with tortilla chips, on tacos, or straight from the spoon.

Notes

Salsa tastes better after sitting in the fridge overnight. Can be frozen, but leave space for expansion.
