An easy and delicious Mediterranean baked fish recipe loaded with colorful veggies and fresh flavors.
Ingredients

- 4 fillets of white fish (hake, cod, or dorada)
- 1 lemon, sliced thin
- 1/4 cup fresh parsley, chopped
- 3 tablespoons olive oil
- 2 cloves garlic, minced
- 1 cup cherry tomatoes, halved
- 1 bell pepper, sliced thin
- 1 zucchini, sliced thin
- 1 teaspoon dried oregano
- 1 teaspoon paprika
- Salt and black pepper to taste
Instructions
- Preheat the oven to 200°C (390°F).
- Drizzle 2 tablespoons of olive oil in a baking dish.
- Add the sliced bell pepper, zucchini, and halved cherry tomatoes to the dish.
- Sprinkle half of the dried oregano, paprika, salt, and black pepper over the veggies and toss.
- Lay the fish fillets on top of the veggies.
- Top the fish with minced garlic and lemon slices, adding the remaining oregano, salt, and pepper.
- Drizzle the remaining tablespoon of olive oil over everything.
- Bake for 20-25 minutes until the fish is flaky and the veggies are tender.
- Garnish with fresh parsley before serving.
Notes
Feel free to substitute the fish and veggies with what you have on hand. This recipe is very forgiving!
