Description

An easy and delicious Mediterranean baked fish recipe loaded with colorful veggies and fresh flavors.


Ingredients

  • 4 fillets of white fish (hake, cod, or dorada)
  • 1 lemon, sliced thin
  • 1/4 cup fresh parsley, chopped
  • 3 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 cup cherry tomatoes, halved
  • 1 bell pepper, sliced thin
  • 1 zucchini, sliced thin
  • 1 teaspoon dried oregano
  • 1 teaspoon paprika
  • Salt and black pepper to taste

Instructions

  1. Preheat the oven to 200°C (390°F).
  2. Drizzle 2 tablespoons of olive oil in a baking dish.
  3. Add the sliced bell pepper, zucchini, and halved cherry tomatoes to the dish.
  4. Sprinkle half of the dried oregano, paprika, salt, and black pepper over the veggies and toss.
  5. Lay the fish fillets on top of the veggies.
  6. Top the fish with minced garlic and lemon slices, adding the remaining oregano, salt, and pepper.
  7. Drizzle the remaining tablespoon of olive oil over everything.
  8. Bake for 20-25 minutes until the fish is flaky and the veggies are tender.
  9. Garnish with fresh parsley before serving.

Notes

Feel free to substitute the fish and veggies with what you have on hand. This recipe is very forgiving!
