Ingredients

- 1 cup dried chickpeas
- 1 chopped onion
- 2 cloves garlic, minced
- 1/4 cup fresh parsley
- 1/4 cup fresh cilantro
- 1 teaspoon ground cumin
- 1/2 teaspoon baking soda
- Salt to taste
- Pepper to taste
- Oil for frying
Instructions
- Soak the chickpeas in water for 8 hours or overnight.
- Drain and rinse the chickpeas.
- In a food processor, blend the chickpeas, onion, garlic, parsley, cilantro, cumin, baking soda, salt, and pepper into a coarse paste.
- Form balls or patties from the mixture.
- Heat oil in a pan over medium heat and fry the falafels until golden brown on both sides, about 3-5 minutes per side.
- Remove and place on a paper towel to absorb excess oil.
- Serve hot with tahini sauce or in pita, adding your favorite vegetables or sauces.
Notes
For a healthier option, bake the falafels at 375°F (190°C) for 20-25 minutes.
