- 4 large potatoes
- 100g feta cheese
- 3 tablespoons olive oil
- 1 teaspoon dried oregano
- Salt to taste
- Pepper to taste
- Fresh parsley for garnish
Instructions
- Preheat the oven to 200°C (400°F).
- Peel and cut the potatoes into large chunks.
- In a large bowl, toss the potatoes with olive oil, oregano, salt, and pepper until well coated.
- Spread the potatoes on a baking sheet and roast for 30-35 minutes until golden and crispy.
- Remove the potatoes from the oven and crumble feta cheese on top.
- Return to the oven for another 5 minutes until the cheese melts.
- Serve hot and garnish with fresh parsley.
