Description

Ingredients

  • 1 cup Greek yogurt
  • 1/4 cup chopped onion
  • 1/4 cup almond flour
  • 1 egg
  • 1 teaspoon garlic powder
  • 1 teaspoon Italian herbs
  • Salt and pepper to taste
  • Olive oil for frying

Instructions

  1. Grate the zucchinis and squeeze out the excess water with a clean cloth.
  2. In a large bowl, mix the zucchinis, Greek yogurt, onion, almond flour, egg, garlic powder, Italian herbs, salt, and pepper.
  3. Heat olive oil in a skillet over medium heat.
  4. Using a spoon, drop portions of the mixture into the skillet and flatten them slightly.
  5. Cook until golden brown, about 3-4 minutes on each side.
  6. Serve hot as a side dish.

Notes

For a crispier texture, you can use breadcrumbs instead of almond flour.
