- 2 large zucchinis, grated
- 1 cup Greek yogurt
- 1/4 cup chopped onion
- 1/4 cup almond flour
- 1 egg
- 1 teaspoon garlic powder
- 1 teaspoon Italian herbs
- Salt and pepper to taste
- Olive oil for frying
Instructions
- Grate the zucchinis and squeeze out the excess water with a clean cloth.
- In a large bowl, mix the zucchinis, Greek yogurt, onion, almond flour, egg, garlic powder, Italian herbs, salt, and pepper.
- Heat olive oil in a skillet over medium heat.
- Using a spoon, drop portions of the mixture into the skillet and flatten them slightly.
- Cook until golden brown, about 3-4 minutes on each side.
- Serve hot as a side dish.
Notes
For a crispier texture, you can use breadcrumbs instead of almond flour.
