An easy and flavorful recipe for marinated tomatoes that will impress your friends and delight your taste buds.
Ingredients

- 2500 g ripe tomatoes
- 6–7 garlic cloves
- 1 bunch of fresh cilantro
- 1 bunch of parsley
- 400–450 g onions
- 2 teaspoons salt
- 2.5 tablespoons sugar
- 1 tablespoon neutral oil
- 25 ml vinegar (9%) per jar
Instructions
- Place a garlic clove at the bottom of each sterilized jar.
- Add fresh herb leaves and a few peppercorns.
- Alternate layers of sliced tomatoes and onion rings, sprinkling more herbs and spices in between.
- Finish off each jar with a final layer of onions and herbs.
- Pour boiling water over the tomatoes, covering them completely, and let them steep for about 15 minutes.
- Strain the liquid, then bring the sugar, salt, and oil to a boil.
- Pour the marinade back over the tomatoes and soak them.
- Seal the jars tightly and flip them upside down to create a vacuum.
- Allow marinated tomatoes to work their magic as you relax!
