Ingredients

- 1 kg ripe tomatoes (or 2 cans of crushed tomatoes)
- 1 onion
- 2 cloves garlic
- 1 tablespoon olive oil
- 1 teaspoon sugar (optional)
- Salt and pepper to taste
- Fresh herbs (like basil or oregano)
Instructions
- Prep the ingredients: Wash the tomatoes, remove the seeds, and cut them into chunks. Finely chop the onion and garlic.
- Heat the oil: In a large skillet, heat the olive oil over medium heat.
- Sauté the onion and garlic: Cook the onion until it’s transparent, then add the minced garlic and cook for another minute.
- Add the tomatoes: Toss in the chopped tomatoes and season with salt and pepper. Add sugar if desired, and stir.
- Let it simmer: Lower the heat and let the sauce cook for about 30 minutes, stirring occasionally.
- Incorporate the herbs: Stir in fresh herbs right before serving.
Notes
Tastes even better the next day. Can be frozen for later use.
