Description
Leche Frita is a delicious Spanish dessert that combines the creaminess of milk with a crispy exterior, perfect for any time of the day.
Ingredients

- 1 litro (4 tazas) de leche entera
- 1 rama de canela
- La piel de medio limón amarillo
- La piel de media naranja
- 150 g (2/3 taza) de azúcar
- 120 g (1 taza) de maizena / fécula de maíz
- 1/4 cucharadita de sal
- 3 yemas de huevo *
- 1 cucharadita de vainilla (opcional)
- 1 cucharada de anís (opcional)
- 30 g (2 cucharadas) de mantequilla (opcional)
- 2 huevos
- 90 g (3/4 taza) de maizena / fécula de maíz
- 500 ml (2 tazas) de aceite suave
- 60 g (1/4 taza) de azúcar para rebozar
Instructions
- Prepare a square 20×20 cm Pyrex dish by greasing it with oil or non-stick spray.
- Infuse 750 ml of milk in a saucepan with sugar, citrus peels, and cinnamon until it boils. Reduce heat and simmer for 5 minutes. Remove peels and set aside.
- In a separate bowl, mix the remaining 250 ml milk with maizena and salt. Add egg yolks, vanilla, and anise, and combine well.
- Add the milk infusion to the maizena mixture, stirring thoroughly. Return to the heat and cook for about 10 minutes until thickened, stirring continuously.
- Remove from heat, strain the mixture to eliminate lumps, and add butter.
- Pour the cream into the prepared dish and cover with plastic wrap. Chill in the refrigerator overnight.
- Once set, turn the dish onto a cutting board and cut into squares.
- Dip each square first in maizena and then in beaten eggs. Fry in hot oil until golden brown, about 1-2 minutes per side.
- Transfer to a paper towel to absorb excess oil and coat with sugar. Serve warm or cold.
Notes
Remover bien la mezcla durante la cocción para evitar grumos. Puedes preparar la infusión de leche con antelación.
