Description

Delicious and healthy vegetable medallions, easy to prepare and customizable with your favorite vegetables.


Ingredients

Scale
  • 150 g potatoes
  • 1 zucchini
  • 2 carrots
  • 1 egg
  • 2 tablespoons flour
  • Olive oil
  • Salt
  • Pepper
  • Nutmeg

Instructions

  1. Peel and cut the potatoes into pieces. Boil in water for 15 minutes. Drain and mash until smooth.
  2. Season the mashed potatoes with salt and pepper, add a pinch of nutmeg, then incorporate the egg and mix well.
  3. Grate the unpeeled zucchini and peeled carrots. Cook in a pan with a little olive oil for 5 minutes.
  4. Add the cooked vegetables to the potato mixture and combine everything.
  5. Add the flour and mix again until well combined.
  6. Form dollops of the mixture on a baking tray lined with parchment paper. You can use biscuits cutters if you want perfect medallions.
  7. Bake at 220°C for 20 minutes. Enjoy!

Notes

Serve hot with a fresh salad or light sauce. Perfect as a side dish for meats or fish. If there are leftovers, store in an airtight container in the fridge for up to 3 days, or freeze for later.
