Delicious and healthy vegetable medallions, easy to prepare and customizable with your favorite vegetables.
Ingredients

- 150 g potatoes
- 1 zucchini
- 2 carrots
- 1 egg
- 2 tablespoons flour
- Olive oil
- Salt
- Pepper
- Nutmeg
Instructions
- Peel and cut the potatoes into pieces. Boil in water for 15 minutes. Drain and mash until smooth.
- Season the mashed potatoes with salt and pepper, add a pinch of nutmeg, then incorporate the egg and mix well.
- Grate the unpeeled zucchini and peeled carrots. Cook in a pan with a little olive oil for 5 minutes.
- Add the cooked vegetables to the potato mixture and combine everything.
- Add the flour and mix again until well combined.
- Form dollops of the mixture on a baking tray lined with parchment paper. You can use biscuits cutters if you want perfect medallions.
- Bake at 220°C for 20 minutes. Enjoy!
Notes
Serve hot with a fresh salad or light sauce. Perfect as a side dish for meats or fish. If there are leftovers, store in an airtight container in the fridge for up to 3 days, or freeze for later.
