Delicious baked orecchiette pasta with savory sausage, mushrooms, and cheese.
Ingredients

- 400 g orecchiette
- 200 g mixed mushrooms
- 200 g sausage
- 1 onion
- 400 g peeled tomatoes
- 200 g mozzarella
- 50 g grated parmesan
- Olive oil
- Salt
- Pepper
- Parsley
Instructions
- Cook the orecchiette in salted water until al dente.
- In a skillet, heat the olive oil and sauté the finely chopped onion.
- Add the sausage and brown it.
- Stir in the mushrooms and cook until tender.
- Add the crushed peeled tomatoes and cook for about 10 minutes.
- Drain the orecchiette and mix them with the sauce.
- Add the mozzarella and stir well.
- Transfer everything to a baking dish, sprinkle with parmesan, and bake at 180°C (356°F) for 20-25 minutes or until golden brown.
- Serve with fresh parsley.
Notes
Refrigerate leftovers in an airtight container for up to 4 days. For longer storage, freeze in individual portions for up to 2 months.
