- 2 boneless, skinless chicken breasts
- Salt and pepper to taste
- 1/2 teaspoon garlic powder
- 1 tablespoon soy sauce
- 1/2 teaspoon onion powder
- 1 tablespoon olive oil
- 2 teaspoons chili powder
- 1 teaspoon smoked paprika
- 3 packages of instant ramen noodles (discard the seasoning packets)
- 240 ml chicken broth
- 1 tablespoon butter
- 1 tablespoon fresh grated ginger
- 2 tablespoons Sriracha (or more for extra heat)
- 3 cloves garlic, finely chopped
- 240 ml heavy cream
- 1 cup shiitake mushrooms, sliced
- 1 red bell pepper, sliced
- Fresh cilantro for garnish
- Sliced green onions for garnish
- Lime wedges for serving
Instructions
- Marinate the chicken: Mix olive oil, soy sauce, chili powder, smoked paprika, garlic powder, onion powder, salt, and pepper in a bowl. Add chicken breasts and coat well. Refrigerate for at least 30 minutes.
- Cook the chicken: Heat a large skillet over medium heat and cook the marinated chicken for about 5 to 6 minutes on each side until golden and cooked through. Remove chicken, let rest, and slice thinly.
- Boil the noodles: In another pot, bring enough water to a boil. Cook the ramen noodles according to package instructions without the seasoning packet. Drain and set aside.
- Make the creamy sauce: In the same skillet used for chicken, melt butter over low heat. Sauté ginger and garlic until fragrant. Add chicken broth, heavy cream, and Sriracha. Stir well until creamy.
- Add vegetables: Stir in the shiitake mushrooms and red bell pepper into the creamy sauce and simmer for about 5 minutes.
- Combine everything: Add the cooked noodles to the skillet and stir well to combine with the sauce.
- Final touches: Top noodles with sliced chicken. Garnish with green onions and cilantro, and squeeze lime juice over before serving. Serve with extra Sriracha and lime wedges on the side.
Notes
For a lighter version, substitute heavy cream with coconut milk. Adjust Sriracha to your spice preference.
