Description

Ingredients

  • 2 boneless, skinless chicken breasts
  • Salt and pepper to taste
  • 1/2 teaspoon garlic powder
  • 1 tablespoon soy sauce
  • 1/2 teaspoon onion powder
  • 1 tablespoon olive oil
  • 2 teaspoons chili powder
  • 1 teaspoon smoked paprika
  • 3 packages of instant ramen noodles (discard the seasoning packets)
  • 240 ml chicken broth
  • 1 tablespoon butter
  • 1 tablespoon fresh grated ginger
  • 2 tablespoons Sriracha (or more for extra heat)
  • 3 cloves garlic, finely chopped
  • 240 ml heavy cream
  • 1 cup shiitake mushrooms, sliced
  • 1 red bell pepper, sliced
  • Fresh cilantro for garnish
  • Sliced green onions for garnish
  • Lime wedges for serving

Instructions

  1. Marinate the chicken: Mix olive oil, soy sauce, chili powder, smoked paprika, garlic powder, onion powder, salt, and pepper in a bowl. Add chicken breasts and coat well. Refrigerate for at least 30 minutes.
  2. Cook the chicken: Heat a large skillet over medium heat and cook the marinated chicken for about 5 to 6 minutes on each side until golden and cooked through. Remove chicken, let rest, and slice thinly.
  3. Boil the noodles: In another pot, bring enough water to a boil. Cook the ramen noodles according to package instructions without the seasoning packet. Drain and set aside.
  4. Make the creamy sauce: In the same skillet used for chicken, melt butter over low heat. Sauté ginger and garlic until fragrant. Add chicken broth, heavy cream, and Sriracha. Stir well until creamy.
  5. Add vegetables: Stir in the shiitake mushrooms and red bell pepper into the creamy sauce and simmer for about 5 minutes.
  6. Combine everything: Add the cooked noodles to the skillet and stir well to combine with the sauce.
  7. Final touches: Top noodles with sliced chicken. Garnish with green onions and cilantro, and squeeze lime juice over before serving. Serve with extra Sriracha and lime wedges on the side.

Notes

For a lighter version, substitute heavy cream with coconut milk. Adjust Sriracha to your spice preference.
