Description
A quick and easy sweet and tangy salsa that combines the flavors of pineapple and carrot, perfect for tacos or grilled chicken.
Ingredients

- 1 large carrot, diced
- 2 thick slices of pineapple, diced
- 1/2 cup vinegar
- 1 cup water
- 1/4 cup sugar
- 1/4 cup tomato sauce
- 1 tsp cornstarch (optional)
Instructions
- Dice the carrot into cubes.
- Dice the pineapple into large cubes.
- Combine the carrot and pineapple in a medium pot.
- Add water, vinegar, and sugar, and heat to medium.
- Cook until the carrot is soft, about 10-15 minutes.
- Let it reduce slightly until the liquid thickens.
- Add the tomato sauce and mix well.
- If thicker salsa is desired, dissolve cornstarch in a bit of water and add it, cooking on low until thickened.
- Mix everything and serve in a bowl.
Notes
For a spicier kick, add chili pepper flakes. This salsa can be frozen for up to a month.
