Description

A quick and easy sweet and tangy salsa that combines the flavors of pineapple and carrot, perfect for tacos or grilled chicken.


Ingredients

  • 1 large carrot, diced
  • 2 thick slices of pineapple, diced
  • 1/2 cup vinegar
  • 1 cup water
  • 1/4 cup sugar
  • 1/4 cup tomato sauce
  • 1 tsp cornstarch (optional)

Instructions

  1. Dice the carrot into cubes.
  2. Dice the pineapple into large cubes.
  3. Combine the carrot and pineapple in a medium pot.
  4. Add water, vinegar, and sugar, and heat to medium.
  5. Cook until the carrot is soft, about 10-15 minutes.
  6. Let it reduce slightly until the liquid thickens.
  7. Add the tomato sauce and mix well.
  8. If thicker salsa is desired, dissolve cornstarch in a bit of water and add it, cooking on low until thickened.
  9. Mix everything and serve in a bowl.

Notes

For a spicier kick, add chili pepper flakes. This salsa can be frozen for up to a month.
