- 250 ml olive oil
- 1 tablespoon lemon juice
- 1 teaspoon mustard (optional)

Instructions
- Peel the garlic cloves and crush them into a paste.
- In a medium bowl, mix the egg yolk with mustard (if using) until smooth.
- Add the crushed garlic to the mixture and stir well.
- Gradually incorporate the oil in a thin stream while vigorously whisking to properly emulsify the sauce.
- Once thickened, add the lemon juice and mix well. Adjust with salt and pepper to taste.
- Refrigerate the sauce for at least one hour before serving to let the flavors meld.
