Description

A zesty and spicy pineapple chipotle salsa that’s perfect for tacos or as a dip.


Ingredients

  • 1 fresh pineapple, peeled and chopped
  • 12 chipotle chiles in adobo, chopped
  • 1/4 red onion, finely chopped
  • 1/4 cup fresh cilantro, chopped
  • Juice of 1 lime
  • Salt to taste

Instructions

  1. In a large bowl, mix together the chopped pineapple, chipotle chiles, red onion, and cilantro.
  2. Add the lime juice and mix well.
  3. Season with salt to taste.
  4. Let sit in the refrigerator for at least 30 minutes before serving to allow the flavors to meld.
  5. Serve with tacos, chips, or enjoy on its own.

Notes

For a different kick, you can experiment with using canned pineapple if fresh is not available.
