Description
A zesty and spicy pineapple chipotle salsa that’s perfect for tacos or as a dip.
Ingredients

- 1 fresh pineapple, peeled and chopped
- 1–2 chipotle chiles in adobo, chopped
- 1/4 red onion, finely chopped
- 1/4 cup fresh cilantro, chopped
- Juice of 1 lime
- Salt to taste
Instructions
- In a large bowl, mix together the chopped pineapple, chipotle chiles, red onion, and cilantro.
- Add the lime juice and mix well.
- Season with salt to taste.
- Let sit in the refrigerator for at least 30 minutes before serving to allow the flavors to meld.
- Serve with tacos, chips, or enjoy on its own.
Notes
For a different kick, you can experiment with using canned pineapple if fresh is not available.
