- 4 large potatoes
- 1 onion
- 2 carrots
- 2 tablespoons butter
- 4 cups vegetable broth
- 1 cup sour cream
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- Peel and cube the potatoes.
- Finely chop the onion and carrots.
- In a large pot, melt the butter over medium heat and add the onion and carrots, cooking until tender.
- Add the potatoes and vegetable broth, bringing to a boil.
- Reduce the heat and simmer for 20-25 minutes until the potatoes are tender.
- Use a blender to puree the soup until creamy.
- Add the sour cream and mix well.
- Season with salt and pepper to taste.
- Serve hot, garnished with fresh parsley.
Notes
For a vegan option, substitute sour cream with plant-based yogurt.
