Description

A cozy and heartwarming Polish potato soup that is easy to make and deliciously creamy.


Ingredients

  • 4 large potatoes
  • 1 onion
  • 2 carrots
  • 2 tablespoons butter
  • 4 cups vegetable broth
  • 1 cup sour cream
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Peel and cube the potatoes.
  2. Finely chop the onion and carrots.
  3. In a large pot, melt the butter over medium heat and add the onion and carrots, cooking until tender.
  4. Add the potatoes and vegetable broth, bringing to a boil.
  5. Reduce the heat and simmer for 20-25 minutes until the potatoes are tender.
  6. Use a blender to puree the soup until creamy.
  7. Add the sour cream and mix well.
  8. Season with salt and pepper to taste.
  9. Serve hot, garnished with fresh parsley.

Notes

For a vegan option, substitute sour cream with plant-based yogurt.
