Description

Delicious and crispy tacos filled with flavorful ground meat and cheese, perfect for a quick and satisfying meal.


Ingredients

  • 1 lb lean ground beef (90%)
  • 1 packet taco seasoning
  • 1/2 cup enchilada sauce
  • 2.5 cups shredded Oaxaca cheese, Mexican cheese or Monterey Jack
  • 10 corn tortillas
  • 1 tablespoon olive oil

Instructions

  1. Preheat the oven to 450°F (230°C).
  2. Cook the ground beef in a large skillet over medium-high heat until browned.
  3. Add the taco seasoning and enchilada sauce. Mix well.
  4. Wrap the tortillas in a damp paper towel and heat in the microwave for 30-60 seconds.
  5. Brush one side of each tortilla with olive oil, sprinkle with 2 tablespoons of cheese, add a portion of meat, and top with more cheese, then fold to form a taco.
  6. Place the tacos on a baking sheet and bake for 16 minutes or until golden and crispy.
  7. Let them rest for 3 minutes before serving.

Notes

You can customize these tacos by adding extra veggies or cheese. Be careful not to overstuff them.
