Ingredients

- 1 lb lean ground beef (90%)
- 1 packet taco seasoning
- 1/2 cup enchilada sauce
- 2.5 cups shredded Oaxaca cheese, Mexican cheese or Monterey Jack
- 10 corn tortillas
- 1 tablespoon olive oil
Instructions
- Preheat the oven to 450°F (230°C).
- Cook the ground beef in a large skillet over medium-high heat until browned.
- Add the taco seasoning and enchilada sauce. Mix well.
- Wrap the tortillas in a damp paper towel and heat in the microwave for 30-60 seconds.
- Brush one side of each tortilla with olive oil, sprinkle with 2 tablespoons of cheese, add a portion of meat, and top with more cheese, then fold to form a taco.
- Place the tacos on a baking sheet and bake for 16 minutes or until golden and crispy.
- Let them rest for 3 minutes before serving.
Notes
You can customize these tacos by adding extra veggies or cheese. Be careful not to overstuff them.
