- 4 œufs (eggs)
- 1 oignon (onion)
- 100 g de fromage râpé (grated cheese)

- Pepper (to taste)
- Huile d’olive (olive oil, for frying)
Instructions
- Boil the potatoes until tender, then scoop out the insides.
- In a bowl, beat the eggs and add chopped onion, cheese, salt, and pepper.
- Stuff the empty potatoes with the egg mixture.
- Heat olive oil in a skillet over medium heat, then add the stuffed potatoes.
- Cook until the eggs are set and the outside is golden brown. Serve hot.
